You can also use electric beaters, as long as they reach a fairly high speed.<\/p>\n<p>The eggs to prepare the sponge cake must be at room temperature, so we advise you to leave them out of the refrigerator <strong>at least 4-5 hours before assembling them<\/strong>.<\/p>\n<p>If you want to make square cakes you can use a square pan <strong>18\u00d718cm or 15\u00d715cm<\/strong>.<\/p>\n<p>The baking powder should not be used in the preparation of the sponge cake but, if you feel insecure about the success, we advise you to <strong>add 1 teaspoon to the flours<\/strong> before sieving them.<\/p>\n<p>You can add to egg whites <strong>1 pinch of salt<\/strong>so they will assemble more easily and the cake will be more balanced.<\/p>\n<p>Pour the cocoa sponge cake mixture into the pan using circular movements, so that it is poured first on the sides and then in the centre.
