Heat over low heat and after 2 minutes add the diced courgettes and peppers. In the meantime put a pot of water on the fire and, when it boils, add 1 pinch of salt and the pasta.  Leave to cook according to the time indicated on the package.<\/p>\n<\/div>\n<div class=\"step step-9\"><span class=\"stepcount\">9<\/span><\/p>\n<p>Add the black olives and fresh basil to the pan of vegetables.  Drain the pasta directly into the sauce and saut\u00e9 quickly to blend the flavours.  Turn off the heat and add the provola. If you don&#8217;t like cheese you can omit it or substitute some for it <strong>tuna fillets in oil in glass<\/strong>.<\/p>\n<p>The fresh tomato can be replaced by cherry or date tomatoes, which have a sweeter taste.  If you have some, you can also use yellow cherry tomatoes, very delicate.  In addition to the basil, you can add some fresh thyme leaves.<\/p>\n<p>We advise you to use good quality black olives, such as<strong> those of Gaeta<\/strong>.  We do not recommend buying canned olives: always try to contact your trusted delicatessen for fresh products.<\/p>\n<p>You can use your favorite pasta: we have proposed smooth paccheri, but you can also use striped paccheri or other short pasta such as mezze Maniche or calamarata.<\/p>\n<p class=\"has-medium-font-size\"><strong>storage<\/strong><\/p>\n<p>Mediterranean paccheri can be stored in the refrigerator, covered with plastic wrap, for <strong>2 days<\/strong>.
