1. What is the difference depending on the members?
Some have an icon of chart and conversation, others not.

2. Which is more preferable, chat or conversation if I send her/him a direct message?

The Chat is kind of like general chat but between two people. Its is kind of limited as you cant really break lines here.

The Conversation, on the other hand is generally like the replies of thread (what you are seeing right now) but between two people. You can freely break lines and are usually used when sending attachments or some other things like that.

If you intend to send videos/attachments, Conversation would be a good choice.

P.S This is a very prominent member of the forum, hiding his name and country wont hide his identity haha as I can literally identify him by his "status icons".

Anyway , as @Legacy already answered you 2nd question. I want to add something on behalf of question 1.
In privacy settings , you can choose that who can start conversation or chat with you. If you turned that feature off , no one able to contact with you privately and those icons will be gone 😊

What you asking exactly ?
1. If I turned of private chat and conversation how will you contact me ?
Well then I am afraid you can't contact me privately then. We have to publicly method (like writing on my profile or mention me in a post or comment).
2. How can you turn off your private chat and conversation ?
It that case use this link...
