Sweet black pudding, the cream of Carnival



The sweet black pudding is a recipe of the Italian tradition revisited. In fact, in the original recipe, the main ingredient was pig’s blood and being illegal since 1992, it has been permanently replaced by chocolate. The new reinterpretation of black pudding is a very sweet one chocolate cream, true to the original only in dark brown color and density. Ideal to accompany especially the typical Carnival sweets such as chiacchiere or castagnole. Of course the black pudding is also a fantastic and very quick dessert spoon ideal for any season.

Ingredients for 6

  • Whole milk: 600 g
  • Granulated sugar: 150 g
  • Bitter cocoa powder: 60 g
  • Dark chocolate: 150 g
  • Corn starch (cornstarch): 40 g
  • Butter: 30 g
  • Cinnamon powder: 2 g
  • Preparation: 10 minutes
  • Cooking: 10 minutes
  • Total: 20 minutes
  • Calories: 302 Kcal / portion

In a large bowl, combine the sugar with the cinnamon.

Also add the starch and cocoa passed through a sieve.

Mix the flour compounds

Then add the cold milk slowly, mixing with a hand whisk to avoid the formation of lumps.
